We are pleased to welcome Kim Tait, co-founder of Tait Farm Foods and Tait Farm’s community supported agriculture program, Community Harvest to the Local Food Journey. What does Kim have to say about eating locally this growing season?
Nothing ushers in the beginning of the fresh and local season like asparagus! As another growing year gets underway, I am keenly aware of the importance of locally grown food. Among the many reasons to buy local foods, taste and freshness are at the top of the list. I savor each and every local fresh fruit and vegetable, eating it with gusto until it is gone. Next comes nutrition and energy use—freshly picked produce is higher in vitamins and minerals and has a lower carbon footprint—traveling an average of 10 miles (as contrasted with 1,300 miles). Local food supports local farmers and preserves our precious farmland. And purchasing locally grown food has a seven-fold ripple effect through our regional economy. We are blessed with local farms, CSAs , farmers markets and restaurants, all spreading the word. The season is beginning, so let’s support and enjoy the local bounty of spring!
