Celebrate New Year’s Eve with a family friendly pineapple, lime, coconut, and mint ‘mocktail’

December 31 always brings First Night to State College, complete with ice sculptures, music and the State College Burning Man. It’s a festival for all ages throughout the day until the fireworks light up the sky at midnight. In keeping with a family-friendly aspect of the evening. I present to you a family friendly mocktail for the celebration!

Pineapple, Lime, Coconut, and Mint Mocktail Adapted by Smitten Kitchen Ingredients - 1 tablespoon fresh mint, minced - 1 cup pineapple juice - 1/4 cup fresh lime juice - 2 tablespoons honey - 3/4 cup coconut milk, well shaken - Ice cubes - Seltzer water, to taste - Lime wedges, springs of mint or sliced fresh pineapple for garnish Steps - In the bottom of a cocktail shaker, place the mint. - Add the pineapple, lime, honey, coconut milk, and a couple of ice cubes and shake well.  - Pour over ice cubes in glasses, finish with a splash of seltzer and garnishes.  - If you want a sweeter drink, add more honey.  - Make four small drinks.
