Sweet and Sour Eggplant

It’s the final week to share your favorite eggplant recipe for a chance to win a $25 gift certificate to Mount Nittany Winery! Still looking for inspiration? Check out this sweet, sour, and slightly spicy recipe.
Ingredients
2 large eggplants, peeled and diced
6 Tbsp olive oil
4 cloves garlic, minced
1 onion, diced
4 tomatoes, seeded and diced
2/3 cup vegetable broth
4 Tbsp brown sugar
2 Tbsp red wine vinegar
1 tsp red pepper flakes
Salt and pepper
Directions
Place eggplant in a colander, sprinkle with salt and let stand for 30 minutes. Rinse well and pat dry. Heat oil in a sauté pan set over medium heat. Add eggplant; cook for 2-3 minutes. Add garlic and onions; cook until translucent. Stir in tomatoes and broth; cover and cook for 15 minutes. Add sugar, vinegar, pepper flakes, salt, and pepper; cook for another 2-3 minutes. Serve warm.
