Turkey Croquettes

Most of us will admit that one of the best parts of Thanksgiving is the leftovers. Here is a favorite recipe for creating another delicious meal from the turkey that might be left on the platter at the end of your annual feast.
Ingredients
2 Tbsp olive oil
1 onion, minced
1 1/2 tsp fresh thyme, chopped
2 cups cooked turkey, minced
1/4 cup turkey gravy
1 cup mashed potatoes
1/4 cup all-purpose flour
1 egg, beaten
breadcrumbs, for coating
oil, for frying
Directions
Heat oil in a large skillet over medium-high. Add onion and cook about 3 minutes. Stir in thyme, turkey, and gravy, cook about 1 minute.
Transfer to a large bowl and let cool. Then add potatoes, flour, egg, salt and pepper; stir well to combine.
Drop 2 Tbsp turkey mixture into a bowl of breadcrumbs, turn to coat, and pat into disks. Arrange on a baking sheet and refrigerate for 15 minutes.
Heat oil in a skillet over medium. Working in batches, cook croquettes until golden brown, about 2-3 minutes per side.
